Some of the things I look for are the taste and consistency of the caramelised sugar - it shouldn't be burnt, the thickness should allow you to rest a spoon on it, and it should stay there after it's broken, not sink into the custard or be like toffee when you're eating it. The custard should be smooth and just set and if it is made with vanilla, the seeds should be uniformly spread. Most of all though, it should taste great!
